So I have been getting a little bit creative in the kitchen, and it has been fun!
Today I am sharing my latest creation, inspired by a friend’s gluten-free pancake recipe she shared with me. But I beefed it up (not literally silly) with all kine protein goodness! 🙂
This is a pancake that is made without any grain. I particularly love it because the 2 main ingredients are egg (I used duck but you can use chicken) and bananas. Two ingredients that come right out of my backyard on our micro-farm here on Kauai! Yahoo.
It is simple to make and I am going to show you how:
Pancakes Made With Eggs And Banana As Base
 These are the ingredients I used:
- one duck egg (again, you can use chicken)
- one banana
- half a scoop of this CHOCOLATE WHEY protein powder
- 1 Tbsp. PB2: organic, powdered chocolate-peanut butter (you could use regular nut butter too)
- Sprinkle of Herbamare salt
Here is the simple how-to:
- Put all the above into your VitaMix or blender and blend on low until mixed.
- Heat a little bit of organic coco nut oil on your pan.
- Pour your pancake mixture into the pan and flip when the bubbles pop.

Ok, so I know you are dying to know what in the heck is the fluffy goodness on top of my protein pancake.
Here you go. Whip these together and add it to the top:
- Half cup of hormone-free greek yogurt
- Half scoop of chocolate whey protein powder
Don’t forget to make your plate all beauteous with sprinkles of organic, finely shredded coconut!
